Meet the Owners of Le Moulin sur Célé


Our love affair with Le Moulin started on Valentine’s Day 2020, our wedding anniversary. Sitting by the fire listening to the roaring wind and beating rain outside, our dreams of sunnier climes led us to a decision to look for a property in France. We have always loved the French way of life, which is rooted in simple timeless pleasures – the fabulous food, the fine wine, the countryside and the culture. We booked a flight to Toulouse and upon arrival at Le Moulin, it truly was ‘love at first sight’. It was a pleasure to meet the then proprietors, Charlie and Josh, both of whom brought a sense of style, charm and character to this very special place. Just a few weeks later, we became the proud new owners of Le Moulin.


Having sold our hotel in Ireland ( 2019, following thirty years of happy hotel-keeping, we were looking for a small property in France, where we could continue our passion for hospitality and tourism. Marc is originally from Switzerland and I come from Donegal, which is in the North West of Ireland. Our home is located on the shores of Lough Eske at the foot of the Blue Stack mountains. Our darling children, Carl, James and Christina have fled the nest and they are looking forward to spending holiday time and creating memories at Le Moulin.


It is our vision to offer a unique and private holiday experience for guests who enjoy luxury combined with homely charm – traditional French décor blended with modern conveniences to five star standard. We hope to build Le Moulin brand so that it is synonymous with quality and exceptional customer service.


We treasure our staff and they understand the importance of their role in making Le Moulin such a special place to visit. Together as a team, we place great focus on attention to detail for every step of the guest journey. We like to anticipate guests’ needs and go the extra mile with a smile


We are very excited to be writing the next chapter of Le Moulin story. In addition to continued investment in upgrading the property, we believe that we can sprinkle our own kind of magic on Le Moulin. It would be our pleasure to extend a warm welcome to you.

Meet the Team at Le Moulin sur Célé

Guest Relations


Marion will be your main contact during your stay at Le Moulin. She has a great love of the house and the local area. Marion will be delighted to share her deep rooted knowledge of this region, of special places to visit as well as where to find local artisan food and wine producers. She can assist with restaurant bookings, information on visitor attractions and any other details which will add to your enjoyment of your holiday at Le Moulin. As a child, Marion used to spend her summer holidays playing on the river Célé while visiting her grandmother. Having grown up in Aveyron, she returned to Cajarc to make a home for herself, her husband Albin and her daughter Capucine. She speaks English fluently and believes in delivering exceptional customer service.

Grounds & Gardens


Le Moulin is loved and cared for by a wonderful local gardener named Patrick Velu. He has managed the grounds for over 20 years and is strongly connected to the property and dedicated to ensuring it stays a magical place for guests to enjoy. Patrick lives close by in Saint-Sulpice which is one mile up the road. Patrick attends to the 15 acres of grounds and river bank. He also helps with organising all the outdoor activities such as canoeing, cycling, horse-riding etc. Patrick loves meeting guests and he is always happy to share some advice on where to visit during your stay in the area and of course he would be delighted to share the story of Le Moulin with you.



Monika is in charge of the housekeeping duties of Le Moulin. She is friendly, upbeat and will make you feel right at home. Originally from Eastern Europe, she now resides about twenty minutes drive from Le Moulin. She speaks great English and French and enjoys interacting with guests. In advance of your arrival, Monika will have the house ready for you and she will have prepared an excellent welcome hamper for your enjoyment. She will show you around the property and will be available should you have any queries. Monday through Friday, she will do daily clean and spruce up of the kitchen, communal areas and bedrooms. You will feel very well looked after with Monika around.
