About Le Moulin

Located in the heart of the Célé valley in southwest France, Le Moulin is an exclusive holiday rental property that combines rustic charm with high standards of personalised service for up to 10 guests. Owned and managed by the Gysling family, this  former 16th century watermill is available to rent on a weekly basis from May to October. Guests enjoy the privacy of the grounds, swimming pool and riverbank, as well as exploring the Lot region of France which is noted for it’s food, wine, culture and stunning scenery on the pilgrim’s path to Santiago de Compostela.

Background Story

Husband and wife team Marc Gysling and Deirdre McGlone have a proven track record in hotel-keeping, having, over a period of 30 years, built and managed the multi-award winning Harvey’s Point hotel in Donegal, Ireland. Following the sale of their hotel in 2019, they fulfilled their life-long dream to buy a property in France. Over the past few years, they have renovated Le Moulin to an exceptionally high standard and the property opened its doors to welcome guests in the summer of 2023.

Enjoying their return to the world of hospitality, the Gysling family hopes to offer a unique and private holiday experience for guests and to build Le Moulin brand so that it is synonymous with quality and exceptional customer service.

From the moment we arrived at Le Moulin sur Célé, we knew our two-week family break was going to be something truly special. Nestled in the heart of the most breathtaking, picturesque scenery, this charming getaway proved to be a perfect blend of comfort, beauty, and tranquility. The accommodation was impeccable. Our spacious and beautifully decorated rooms offered stunning views of the surrounding landscape, allowing us to wake up to the serene sounds of nature every morning. The attention to detail in each room, from the cozy bedding to the tasteful décor, made our stay incredibly comfortable and homely. What truly sets Le Moulin sur Célé apart is its exceptional service. Deirdre and Marc were not only professional and efficient but also warm and welcoming, making us feel like part of their family. They were always on hand to ensure our stay was flawless and went above and beyond to cater to our family's needs. The amenities were fantastic. We indulged in delicious, locally-sourced meals that were a delight to the palate. The outdoor activities were a major highlight for our family. We enjoyed leisurely walks along the picturesque Célé river, immersing ourselves in the beauty that surrounds this unique spot. Our two boys (aged 2 & 4) were thoroughly entertained throughout our stay. The safe and engaging environment meant they could freely explore and play, giving us parents a much-needed chance to unwind and relax. Le Moulin sur Célé provided us with the perfect balance of adventure and relaxation. It was a place where we could disconnect from the hustle and bustle of everyday life and reconnect as a family. The memories we created here are invaluable and will be cherished forever. In summary, our stay at Le Moulin sur Célé was nothing short of magical. It's a hidden gem that offers a unique and memorable experience for families. We are already planning our return to this little slice of paradise!

Deirdre and Marc have evidently worked hard to bring the dream of Le Moulin to life. They’ve lovingly restored the beautiful mill house and surrounding buildings with an eclectic mix of Irish and French flair and design ideas, updating and restoring with sensitivity and passion. We loved the food, the wine and the ambience. There’s enough space to find a secluded corner if you feel the need to have some quiet time but the public areas are generous – especially the garden dining room where everyone can come together with comfort and ease. Having the river so close was a real bonus, and sitting on the bank with a bottle of something white, cold, fizzy and of course alcoholic after swimming and kayaking was just wonderful! The surrounding countryside is classic south of France with a sun-kissed landscape, beautiful vernacular architecture and lovely places to explore but only if you can bear to tear yourself away from Le Moulin!

Had a wonderful time here with family. Peaceful and charming location on the water. The Villa and surrounding area is picture-postcard. Deirdre and Marc are the most gracious hosts and made our stay one to remember.

From the moment we arrived it was amazing. A warm welcome from Deidre and Marc. Deidre and Marc thought of everything nothing was too much trouble. The villa itself was absolutely beautiful. It sleeps 10 people very comfortably. The setting is out of this world. Total relaxation is easily found ! The pool, garden is wonderful with so many areas to relax. Hammocks down by the river and tennis court if you are feeling energetic . The wildlife is all around from birds squirrels and deer roaming freely. Deidre and Marc were lovely hosts. They gave lots of information about restaurants , where to visit and cycle paths. They really have thought of everything. The area is unspoilt and just beautiful we didn’t want to leave. We have already booked for next year for a week which we are counting down the days already.!! It’s a little piece of heaven in this mad world of ours x

As you enter the property on the “yellow brick road” you are drawn into the exquisite pool area and outdoor spaces providing an ideal place to relax, enjoy a glass of wine, listen to the musical sounds of the river and simply revel in the beauty of the building and surrounding countryside. Throughout the property, you enjoy the relaxed, sophisticated yet homely living spaces, using a colour palette redolent of many of the iconic French artists such as Matisse, Deirdre brings her own Donegal taste to the property using the famous Magee tweed covers. It is clear the level of thought and detail provided for guests from the sunhats to the wonderful body wash, scrubs, and bathrobes provided by the wonderful Irish Handmade Soap company, all designed to ensure your relaxing , luxurious stay and the feeling of being in a sanctuary. For a family, this property provided something for everyone, splashing in the pool, swimming and kayaking on the river, playing tennis, croquet, or table tennis, and one of the most memorable aspects of Le Moulin is to locate your own unique piece of solitude a place to read and meditate and of course the use of bikes to explore the beautiful countryside. A particularly superb feature of the Le Moulin is the exceptional garden dining room which can seat 16 and provides the ideal location to celebrate all that is French cuisine and wine but more importantly, share the holiday thoughts and memories of the days in Le Moulin. Cant wait to return.

When it comes to describing our holiday at Le Moulin, superlatives abound. It simply was the most exceptional place. From the homely charm of the interior to the beautifully maintained grounds; from relaxing by the babbling river to competing in an exciting game of tennis; from lazing by the glistening pool by day to gazing at the twinkling stars by night, our stay was a truly wonderful experience. Le Moulin offered something special to every member of our family, and has given us many amazing memories to keep us going through the long winter nights ahead. It was beyond idyllic! This is a truly amazing place; half of me wants everybody to know about it and half of me wants to keep it a secret - we will be returning again one day, subject to availability! Deirdre and her family are clearly passionate about their stunning property and go above and beyond to make your experience as relaxing and non-intrusive as possible. Everything has been thought through; as some of the first guests after major renovation works, we were trying to "snag" but it was too much like hard work - nothing obvious to us! The pool is beautifully refreshing, the river also - you might like to bring water shoes for exploring the shallow waters. So many seating choices - hammocks, loungers, director chairs - dotted around the property, I'm not sure I managed to find them all. The kitchen is well positioned between two terraces so you're never alone when it's time to feed the masses. It's also superbly equipped. We loved having aperitifs by the river and dinner on the middle terrace - couldn't bring ourselves to visit any of the recommended restaurants as nothing could beat our location but there are plenty of options out there within a 20 minute drive. We did, however, engage Claude-Emmanuel and Evgenia for a culinary experience that left us full to the brim. The food just kept on coming and every dish was so beautifully presented. Claude-Emmanuel worked quietly and efficiently behind the scenes and Evgenia talked us through each course and the wine pairings. Highly recommend whether you have a particular occasion to celebrate or not! The bedrooms are all well appointed with both fans and air conditioning. The beds are really comfortable and the pillows are something else. The tennis court provided quite a bit of entertainment - obviously not a predictable game on grass! The highlight for us was the croquet set; google instructions for "golf croquet" and you'll be up and running in a few minutes. Simple game but becomes quite competitive (and addictive) - we ended up playing it by torchlight on several occasions! There's also a table tennis table by the river so we had quite a few on-going tournaments... The website and house manuals, by Deirdre's own admission, have not been completely updated so don't take everything on/in there as gospel. Patrick is still there and the pool and gardens are tended to everyday. There's no daily housekeeping (which was a bonus for us) but there are plenty of spare towels/tea towels, together with a brand new washing machine and dishwasher (capsules supplied). Canoes are rentable from the local village and Patrick sorted that out for us. Highly recommend a day out doing this. It's a great feeling being able to stop halfway down at Le Moulin for lunch! We all enjoyed the paddling down to St Sulplice; the last stretch to Marcilhec was harder and less interesting but you are rewarded with the Alton Towers style toboggan just before the end (to the left of the weir). If you do finish here, make sure you carry on under the bridge to the end point, rather than lugging your canoes out in the middle of the village - we did get some strange looks! You must get the gist by now... it's a great place to stay and if you've got any issues, whatsoever, Deirdre's cottage is at the top of the driveway - far enough away for total privacy but close enough to be there at the drop of a hat if needed. One last thing - the professional ice maker in the utility room. I want one! Thanks Deirdre and Marc for being so welcoming. I truly wish you the best of luck with your future projects and hope to see you again in a couple of years.

Our stay at the Moulin sur Cele in Saint-Sulpice was absolutely amazing! We were one of the first guests at the newly refurbished property, the facilities were exceptional. I loved the hammocks by the river and the lovely countryside walks, the amazing local food and the Michelin star private dining experience by Claude Emmanuel and Evgenia which the property organised for us. The bedrooms, bathrooms, linens and towels all fab! It's the perfect retreat for relaxation and enjoyment. I visited with a group of friends and we had a great week catching up. Highly recommended to get off the busy hamster wheel and relax.

Enjoying her return to the wonderful world of hospitality, Deirdre is doing what she does best – looking after guests. She loves doing the laundry, cleaning the house and adding little touches to make Le Moulin even more special. Her favourite pastimes include taking Harvey the dog for a walk, sampling fine French wine and dining on fabulous French food.

From cheffing to IT and website design to general maintenance, Marc has spent the past two years realising his vision for Le Moulin. He has overseen the entire renovation of the property and not one to sit on his laurels, he is already working on plans for new projects that are in the pipeline. He loves the French way of life and in particular, the favourable weather.

With a great talent for building design, Carl is currently studying Architecture in Dublin. Prior to that, he spent a year with Marc working on the renovation project at Le Moulin. During summer 2023, he was responsible for swimming pool maintenance and helping Patrick in the garden. Carl enjoys exploring the Lot region, looking for unique off the beaten track places to visit.

Having moved to France to study business in the International Business School in Toulouse, James spent his summer working in the prestigious Chateau de la Treyne near Rocamadour. During his days off, he helped out at Le Moulin. He has become fluent in French.

The youngest member of the Gysling family is pursuing her dream to become a hotel manager and is studying in Shannon College of Hotel Management in Ireland. She hopes to secure work placement in France next summer having helped out at Le Moulin in it’s first season.

Patrick Velu

Patrick Velu

Living in the local village of Saint-Sulpice, Patrick has been a loyal member of Le Moulin team for over 20 years. His first job was working in the vineyard and he was responsible for making a rather excellent Malbec on the property. A qualified tree surgeon, horticulturalist and canoe instructor among his many talents, Patrick takes great care of the gardens and grounds at Le Moulin.

Harvey

France is now home to Harvey, the 3 year old Golden Labrador. He has adapted very well to a climate that is different from Ireland. His favourite pastime is jumping in the river to cool off as well as picking the largest stones that he can find and placing them on the river bank. Harvey loves to welcome guests and he adores being the centre of attention (only when allowed 🙂
